With the name of "Shortening" it’s intended an emulsion of vegetable and /or animal oils used for frying or as an ingredient for the bakery industry (biscuits and cakes) to make the products softer, friable and crumby.
Its characteristic is to be solid at room temperature, to have a neutral flavor, to provide excellent performance in frying due to its higher smoke point and, last but not least, the economic convenience.
The name "Vegetable Ghee/Vanaspati" refers to an analogue of clarified or anhydrous butter but with a texture more granular and of exclusively vegetable origin.
It is mainly used for frying in Middle East and sub-Asian areas and can be supplemented with local spices and flavors.
EBM is able to provide all the equipment for the entire production cycle starting from the oil storage tank, the raw materials mixing system (Mixing tank), the COIMIX® machine (SSHE - Scraped Surface Heat Exchanger), the plasticizer (Pin Rotor), up to the packaging systems of the finished product.
Supplies may also be of individual machines or as complete "turnkey" plants.
